April was a real mess, guys. I found myself wishing for more time in the day to get all the work done, to go to the gym, and to do fun things. There just never seemed to be enough time. I failed miserably to balance work and life. I got quite tired halfway through the month and I desperately wanted more time for sleep every night. Clearly, I want it all! This month, I’m thinking of baking myself a batch of giant chewy peanut butter cookies, just because I made it through April. We deserve cookies! And everybody is talking about the super easy recipe for Bon Appetit’s best chocolate chip cookies (which Chris Morocco thankfully updated to include weight measurements so there are no more excuses! By the way, I have a handy guide to baking conversions if you need some help on the subject). I did manage to bake a little in April, like this chocolate pound cake loaf cake flavoured with espresso. I also updated my roundup of best rhubarb recipes because many of you already have rhubarb to bake with, though I probably won’t see any until June. Call me jealous!
New cookbook alert! Simple Cake by Odette Williams
I’ve added a cookbook to my collection of baking books: Odette Williams’ gorgeous new book Simple Cake (which you can order from Amazon). I am a big fan of simple cakes, especially single layer cakes, like this single layer chocolate cake topped with whipped cream and strawberries, this gluten-free lemon cake topped with lemon curd and raspberries, this banana snacking cake topped with a milk chocolate fudge frosting. You can’t go wrong with a simple cake and they can be even more stunning than elaborate layer cakes, and less fussy too. I can’t wait to bake from this new baking book.

This digital download can be used as a free desktop background for your computer (or smartphone). Simply click the size of the image you need below and the image will open in a new tab. Go to the new tab with the image and download that image by right clicking on the image to save it to your computer (or do what you’ve got to do to save it to your phone). Find the file in your folder of Downloads (or Photos) and right click on the image title to set the image as your wallpaper/desktop image. Note the file may have also been saved to your desktop depending on the settings of your computer.
