This easy recipe for a substitute for eggs works with either ground chia seeds or ground flax seeds. This baking substitute replaces 1 large egg and can be used in cakes, brownies, and cookies. Results aren't guaranteed but should work fairly well in many recipes.
In a spice grinder, grind the chia seeds (or flax seeds) into a very fine powder.
In a small bowl, whisk together the ground seeds with the water. Let sit for 10 minutes. The mixture will gel and have a similar texture to a whisked egg. It is now ready to use.
Notes
This recipe replaces one (1) egg. If you want to replace two eggs, double the recipe.
