Ingredients

  • 1 blind-baked 9-inch pie shell
  • 3 large peaches sliced
  • 1 egg
  • 80 grams ( cup) unsalted butter melted
  • 70 grams ( cup) granulated sugar
  • 24 grams (3 tbsp) all-purpose flour
  • 10 mL (2 tsp) vanilla bean paste
  • 2.5 mL (½ tsp) ground cinnamon
  • 2.5 mL (½ tsp) Diamond Crystal fine kosher salt
  • 0.625 mL ( tsp) ground nutmeg

Instructions

  • Preheat the oven to 400°F.
  • Arrange the peaches at the bottom of the pie shell.
  • Whisk all the ingredients together.
  • Pour into a blind-baked 9-inch pie shell.
  • Bake at 400°F for 10 minutes, then reduce the temperature for another 45 minutes, or until the filling is set, even in the middle.
  • Serve warm.
